French menu conundrums

amuse bouche - tiny bite size appetisers, like canapes, sometimes one or two different items per guest, usually a surprise not mentioned on the menu and presented to occupy diners while they wait for the first course, sometimes presented by the server as 'with compliments of the chef' (literally to amuse the mouth)
amuse guele - same as above

Unlike Queen Victoria, said to be 'not amused', most diners are extremely amused, especially as the contents are a surprise, often different every day so maybe a surprise to the waiter who has to go and ask the chef the contents, if you ask
