If you travel to Turkey, an entire underground city on many floors has been discovered in Turkey. They believe there may be many more. This one is open as a tourist attraction.It is in Gaziemir, Cappadocia, central Turkey.

Vietnam has more underground places you can visit, which were used by the other side in wartime, but in Vietnam the access points are very narrow, and claustrophobic, only suitable if you are small and agile and don't mind an entrance which is vertical and hardly bigger than you are.

You can visit the underground room where Churchill sheltered in central London during WWII in England. During WWI and WWII people slept in the underground for protection from bombs, as you will learn in England from museums about London and WWII.

The USA also had an underground for the government. In the USA many buildings were made with underground areas for shelter.

Does it remind you of tales from your childhood? I recall George MacDonald's children's book series, The Princess and Curdie, also The Borrowers and Alice in Wonderland by Lewis Carroll.
If you want to stay in an underground or cave hotel you will find several worldwide. Any country which has underground caves or wine cellars is likely to provide opportunities for seeing underground caves, wine cellars, and even an underground shelter or complex.
