Oops - I missed pancake day! Quick - where's the maple syrup?

Oh, dear, I missed pancake day. I'm supposed to be on a diet and this would have allowed me to eat pancakes. I love pancakes, especially with maple syrup. One hundred percent pure Buckwud Canadian maple syrup. Yummy.

In England traditionally we would eat maple syrup with strawberry jam or lemon and sugar or lemon and honey. Countries all over the world eat pancakes. The French have large thin pancakes with Grand M a r n i e r (spell check keeps inserting Mariner) served around Mont St Michel. The Americans eat tiny round thick pancakes, like the slice off the top of a muffin.

The Russians have pancakes with savouries, as do many European countries. Blinis, with sour cream.
The Italians have cannelloni, a tube or spiral of pasta around spinach (Florentine) or meat in white sauce, with a white cheese sauce on top.

The Indians have pancakes, or sweet breads. Masala dosai with potato - my favourite.

The Chinese serve Peking Duck with shredded spring onion and soy sauce, wrapped in wafer thin savoury pancakes.

Pancakes, Shrove Tuesday, were originally a way of using up last year's flour before lent when you gave up eating goodies.

The basis, the origin, is supposed to be the Jewish festival of Passover, (Jesus's last supper), when matzoh or unleavened bread is eaten.

A Discovery Channel programme went through the ten plagues afflicting the Egyptians when Moses said, 'Let my people go'. The angel of the Lord passed over the houses of the slaves but the firstborn of the Egyptians died. Why? What was the mysterious illness and why did it affect the firstborn? How could so many have died or been poisoned in heavy guarded homes the slaves could not enter?

The answers were:
St Vitus's dance, is a widespread poisoning of wheat when it grows mould after a long rainy season. The cure is to clear out all the old wheat before the next harvest to ensure the new flour is not contaminated. The firstborn died because they were always treated to extra portions of food.

I gave up pancakes on Shrove Tuesday. I'm running late this year. Can I celebrate with pancakes at the weekend? For anybody who doesn't follow tradition, but just like celebrating seasonal customs, why not eat pancakes all week. The latest commercial idea is matching pancakes with wines. A sweet wine?

An amusing idea. But for those of us who eat pancakes for breakfast, and didn't' drink before the working day ends at six, it's just pancake with maple syrup. Delicious!

Happy Passover food, drink, candles and matzo in Morrisons - what do the Hebrew (?) words mean?



Morrisons supermarket has delivered to homes in North West London an advertising leaflet with the title Happy Passover and pictures and prices of food, drink, candles and matzo for Passover and all year.

Glossary
chag- holiday
chag sameach - happy holiday
consomme - French for a thin, usually clear broth or soup
haimisha - like home, home-style
Kosher - observing rules of kashrut from the book of Leviticus, called simple The Bible - known to Christians as Old Testament when they added the New Testament. The rules include no pork, no shellfish, and not mixing milk and meat
kosher for Passover - contains no bread -
marble cake - marble like pattern from mixing cake dough of two colours, usually plain and chocolate in swirling pattern like tie dye fabric
matzo(s) - alternative spelling matzah
passover - festival time celebrating the Angel of Death passing over the houses of the Hebrew slave class who were building the pyramids (according to the Bible or Old Testament, which many will know from MGM movies). The Hebrews were spared from the deaths which struck the firstborn sons of the homes of the Egyptian overlords. Discovery Channel called in forensics experts and concluded that deaths were from contaminated cereals. The result was that rulers introduced using up old crops before the new harvest, hence Spring Cleaning, giving up foods for lent, and cleaning the house for Passover, banning bread with raising agents  only eating dry crackers called matzoh, even using a special new set or crockery if you are religious during the festival of passover.

The origins of pancake day?

What's the origin of pancake day? Using up flour and food, old food, which you will given up for lent, a Christian festival. But it probably goes back to pre-Christian days, when spring cleaning got rid of old food ready for the next harvest.

I wonder whether the fast days were for going without to help eke out supplies for your own family, or throughout the community. Or could it have been to stop the old food contaminating the new? Looking at the cereal and dairy supplies (in pancakes), you are removing the old flour, giving the utensils a rest period (like the seventh day of rest for families and animals, and fields lying fallow).

A Discovery channel programme investigated the ten plagues and the deaths of the firstborn Egyptian children of the ruling class.  The called in detectives and forensic investigations of possible causes of death. After eliminating as unlikely the invasion of every home and striking down of only one inmate, they looked at the possibilities or deliberate or accidental poisoning.

Investigators compared mass deaths with later outbreaks in rural communities. They found incidences in American history of deaths from St Vitus's dance, which is caused by contamination of stored cereal crops (used to make flour) in unduly wet weather.

The conclusion was that it was likely that the richer pharaonic tribes lived in one area, eating one feral crop, whilst the slave or servant or foreign group lived elsewhere eating another crop. The richer people had stores of crops. The first born child was traditionally given a double portion of the food, because the firstborn was favoured, (and often as much as four years older if breastfed).

Not knowing the cause of the problem, or knowing the cause and wanting the entire population to abide by the rules for preventing it happening again, the rulers then established a rule or tradition of using up old flour, making it both fun (pancake day) and serious (abstaining for lent).

The Jewish festival of Passover celebrates the passing over of the children who were not killed by the angel who supposedly slew the Pharoah's first born, and includes removing all wheat from the house for a week, and using all new crockery. This was depicted in paintings as the last supper, a springtime meal. (Though the bread is might be shown in famous paintings as risen dough rather than flat unleavened bread.)

If you do not observe the Jewish nor the Christian abstentions, you may still find yourself surrounded by people celebrating pancake day and may wish to have fun following the recipes given for making pancakes.

Commerce and marketing now cater for all religions and traditions and are keen to promote anything which sells more goods and keeps well-fed happy customers. If you eat pancakes, but have not had any recently, you will enjoy the promotion of pans and pancake recipes.

Pancakes in America are often small fat items. They can be bought readymade in stacks like biscuits (which in the USA are called cookies).

British pancakes are larger and thinner. British pancakes are half way between the American and French versions.

The thinnest pancakes are the wafer thin French crepes which are huge and rolled up, sold around moated Mont St Michel, in Northern France, sometimes with the addition of Grand Marnier or liqueur.
