The Busy 'Stand With Ukraine' Stand Showing Ukrainians wines - then off for Cheese

Stand with Ukraine, stand at ProWine show at Expo in Singapore in 2023. Photo by Angela Lansbury. Copyright.

The Stand with Ukraine stand was busy all day. It wasn't just sympathy or curiosity. They had loads of wines to try. You want to try red, white, sweet, sparkling. You name it, they had it. And the owner was interesting and full of fun facts. He said he employs large numbers of women. His area is on the west, far away from the fighting. However, flying back was a problem. He had to take a long complicated journey. Flying to another country. Then a long road journey.

They say, buy on an apple, sell on a cheese. I went off to the Cheese area and found Cheese. See later post on cheese.

New Zealand's Broken Heart Spirits - mending a broken heart

Broken heart leaflet and the products. Photo by Angela Lansbury. copyright.

A dramatic sad story, but with a kind of happy ending. Two men in New Zealand had plans for a business. They were full of excitement and happiness. Then one of them died suddenly, totally unexpectedly.

The surviving partner was so upset that he closed down the business, abandoned the plan, and left the area. Time passed.

Then one day. He decided to go back. He went back and decided to re-start the business, in honour of his former business partner. His symbol on the label was a heart, in two colours, red and white, like the two colours of wine. He was determined to do everything he could to make the venture a success to honour his former partner.

The business flourished. They now have two wineries, one in Queenstown. They sell alcohol and Riedel glasses on the website.

Fun Food With Drink At ProWine: vegan meat made from plants, mock cheese from almond milk

ProWein started in Germany, promoting wine. Now it is in several countries annually. Before Covid stopped the shows, the exhibition was attracting 7,218 visitors to 270 exhibitors, showcasing 33 countries.

How did covid hit the hospitality industry and how much have consumers lost and gained? When Singapore Airlines stopped flying they had huge stocks of wine. At one point they did wine tastings for their PPS customers. Products which could no longer be sold in-flight, were offered mail order for home delivery.

67 at Mall had planned to open a new business in a prime central location in Singapore, top floor at the crossroads overlooking Orchard MRT station.  The whole business project was suspended. But when things started moving again, they built, promoted and now have 15 sommeliers.

Looking at this picture, I can see that you could write the letters of a simple word such as the initials of a person's name or a company name, such as Ava or M & S, using diced cheese.

Wines
Mount Faber Singapore Sling.

It is a trade show. The purpose is to link up B2B (business to business).
So how does this help you and me as consumers? What is going to be on sale in the supermarkets, shops, restaurants and hotels, this season, Christmas time, and in the future? What are the trends?

The big surprise to me was the volume and variety of plant-based imitation meat products. Chicken, lamb, beef.

I was at the ProWine Sept 05-08 in 2022.
Next events, B2B (business to business, trade only), are
27-29 Sao Paolo, Latin America
17-18 Oct 2022 Mumbai, India
08-10 Nov 2022 Shanghai, China

19-21 March 2023 Dusseldorf, Germany
10-12 May 2023 Hong Kong

New Singapore Sling launched at ProWine in Singapore for Mount Faber

Where Can You Drink Singapore Sling

Singapore's Singapore Sling is a world famous pink drink, a cocktail. It is the obvious drink to ask for if you visit the huge Raffles hotel where it was invented. Long ago I went there for a birthday and bought a magnet with the Singapore Sling recipe which sits on the wall in my kitchen in London.  You can ask for Singapore Sling on Singapore Airlines, as I did flying from Heathrow in London to Singapore in September 2022. But now there's a new twist. A new variation. A novelty in presentation. The Mount Faber Singapore Sling.

I tried it at the ProWine show in Singapore. (It's a trade only show, but a few keen drinkers, and wine tasting enthusiasts had heard about it and had signed up and signed in. The show also has dates in Hong Kong and around the world every year, if you want to plan a trip to one far away or near. One of the attractions is the Tastings where you get to try a novelty, or compare several drinks and find your favourite.

Singapore Sling Drink Colours

Red? I often hear that Chinese and Singaporean men prefer red drinks which symbolise masculine power.

White? As a well-dressed woman, on a fun, romantic evening out, I go for white drinks which are less likely to stain my clothes.

Pink? Pink for drink is the spring and summer favourite, for dining outdoors, matching smoked salmon starters and salmon and white fish main courses.

Singapore Sling Size

A Singapore sling in a big glass looks like more for your money. A longer drink might last at lunch time until your sweet dessert. Americans, business people, don't drink at lunch time, as they want to stay awake and alert through the afternoon. Hence the tradition of drinks after six pm.

What's In Your Drink?

The original Singapore Sling was known as a gin sling. Gin and tonic I  thought was a guard against malaria, the bitterness preventing bites, but my husband tells me that tonic was a cure, from tree bark, bitter, and the gin disguised the taste and made you happier.

Then some smart person thought up the alliterative combination of words, Singapore Sling.

Recipes

Recipes vary. Every business, bar-tender and home cocktail maker has a choice.

1 Follow the old recipe efficiently but be sure to stock fresh ingredients.

2 Buy it ready mixed in a bottle from the supermarket or wholesaler. In the tropics, fresh fruit is cheap. At home, add fresh fruit, if nothing else, as a garnish.

3 Get creative with garnish.

Do you want a strong drink for an aperitif, or something less alcoholic so you can be safer walking or driving home? If you are sitting sipping, taking a taxi home, or to your hotel, being tipsy is less of a consideration.

Sweet Drinks

Sweet drinks have less alcoholic content.  Less sugar from fruit such as grapes is converted into alcohol.

But traditionally the color and sweet flavor often come from cherry brandy. Recently a happy marriage was made between a vineyard owner who had been considering uprooting his old, unwanted cherry trees, and the marketing department for two restaurants on Singapore's Mount Faber (where the eye-catching overhead sky cable cars go to the top of Mount Fabre, a clifftop on the South side of Singapore, overlooking the seaside Sentose island, crammed with tourist attractions). The result was a new drink.

Cherry

I tried a sample of the attractively presented Mount Fabre cocktail. The fresh red cherry decoration, was speared by a cocktail stick across the top of the glass like a reminder or the cable car.

Pierced Pineapple

The cherry was wrapped like a rosebud inside a piece of pineapple, another famous fruit ingredient of Singapore Slings.

Place Names - Singapore and Mount Faber

Residents of Singapore can order a Singapore Sling feeling patriotic. For the visitor, added attractions and souvenirs are a glass bearing the name Mount Fabre, and a cute little cable car on a detachable wire which has an end to loop and unloop around itself. To identify your glass (especially important with everybody so health and safety conscious in post-Covid-19 times.

The launch of the new drink took place on Monday September 5th 2022. A visit to Mount Faber, one day, is on my wish list.

ProWine Reminder

Pro-Wine is in Singapore, until 6 every day this week, Monday-Wednesday, and finishes early at 4 pm on Thursday. If you want to note next year's dates, 25-28th April, International Trade Fair for Wines and Spirits, in Singapore 2023.

Meanwhile, if in Singapore, try Mount Faber, Singapore Sling. Cheers!

Where To Find Italian Chianti And What To Notice

Problem
Where does Chianti come from and how will I find one I like?

Answer

Chinati has been called, "The unmistakable Taste of Tuscany". Tuscany is the area on the West coast of Italy.

I went to a guided tasting at Prowine Singapore in 2018 when we tasted six different wines, with information from speaker Edwin Soon. He told us that the Chianti region has hills to catch the sun, and terraces to stop erosion. A river keeps the temperature even, not too cold in winter, but cools the vineyards in summer. Too much water leads to watered down wine.

Where Is It From
Chianti comes from a region stretching between Rome and Pisa and Florence. A prime attraction in Tuscany is the leaning tower of Pisa, leaning like a tipsy bottle of wine. Since these are some of the most popular tourist destinations, if you've been to Italy the chances are you have drunk wine from the local Chianti region, whether or not you knew it, chose it and liked it.

In the old days there was plenty of cheap Chianti, drunk young and not necessarily good, in a bulb-shape bottle, so it had not established a great reputation. However, local producers got together to enforce standards and classify the wines so buyers knew which was which.

The locals wanted to protect their regional name and identity.  Now you will see D.O.C . , quality wine from a specified region the Italian equivalent of the French AOC, Appelation or name, of Origin Controlled, in Italian D.O.C. Denomination of Origin Controlled.

Chianti Classico
I assumed that Chianti Classico was old style, like Classic Coc Cola. I was wrong. Chinati Classico is a region.

What about D. O. C. G?  The extra G for some wines shown on the labels? G stands for guarantia, guaranteed, the upper stratum, or very best of the DOCs.

What is the difference between a co-operative and a consortium? A co-operative is a group which co-operates, operates together, to make wine. A consortium is a group, a trade body, people who have already made wine who come together to market and sell it.

If you get a chance, on holiday or business, go to a place which offers tastings so that you can compare wines, or order two different wines or glasses of wine with a meal and make a note of which you prefer and why?

Red and White
For years I did not drink red wine. It tasted sour and gave me headaches. Later I larned this was due to tannins. Is it an allergic reaction, or just an intolerance? An allergic reaction would make my eyelids and mouth swell up. Panic-stricken. An intolerance just makes me feel headachey and nauseous. Unhappy.

Dry or Sweet?
Do you prefer a dryer or sweeter wine? Can you tell the difference when drinking a wine of a specific good year? I discovered that I like sweet wine and if it's dry the year doesn't matter to me because I don't like it anyway so no point in paying more for myself.

I tried five dry wines, and the Chianti RĂąfina D O C G Riserva 2011 had a distinctive aroma. If I had to choose a dry wine to please others or to go with savoury food or because I had no chance to choose a sweet wine, this is the one I would go for.

Colours of red wine.

Compare the colours of two wines of different ages. The one on the right is browner and older. Wines deepen in colour as they age, like apples going brown. Like ripening fruit, the wines from late-picked grapes are sweeter.

Many people would choose a sweet wine only to go with sweet food, with dessert. My firm favourite was the sweet Chianti - I had not even known anybody made sweet Chianti. The one I sampled was Vin Santo del Chianti Monespertoli D O C Riserva 2007.

How can we remember the name? Vin Santo means holy wine. Del Chianti means of the Chianti region. Monte - mountain. Spertoli - that's the only hard part to remember. I'll just think of myself and the wine maker as experts. Montespertoli. It is a riserva, reserved from 2007, not just bottled early and sold off cheaply when it was plentiful, but has already spent more than ten years maturing.

Italian - English
colli - hill
del - of (the)
consorzio - consortium
Fiorentini - from Florence
Superiore - superior or better
Riserva - reserved or saved - extra special, worth your time and money reserving it and storing it to sell later
santo - saint
vin - wine
vin santo - holy wine
vino - wine (noun)
