Michelin Restaurant Bam! in Singapore. More on dishes, desserts and prices.

We could have had a three course set lunch at S$48 per person. Instead we chose the tapas. Our guest did not warm to the choices of egg or mushroom soup for starters, nor the alternatives of pork or fish for the main course. Saturday brunch is much the same at a higher price, 88 dollars. Plus Plus.

I have used our bill to identify my photos. The bill is presented with items listed alphabetically.

I should have listed the items as we received them.

The banana dessert was definitely a winner. Banana cake with exotic sorbet and caramelised pecans. I loved the sweet crunchy caramelised nuts. 

The other dessert, strawberry meringue looked pretty but did not enthral me as much as my banana cake. 

The Japanese service was unobtrusive but instant. When I knocked over a glass of water, two waiters were there beside us instantly with paper towels and a mop. 

Not like the Italian restaurant staff in England who gasp with excitement on seeing you, wave you to your table, talk loudly and enthuse over the menu, ask how you are and listen to your life story, then confide their own with raised eyebrows and gestures, and wink when you leave. Here, typically Japanese, quietly open the door as you exit and bow low without looking at you.

An alternative set menu is Omakase, chef's choice, starting with an amuse buche, then five courses for 158 dollars. Or seven for 188 dollars.

The main feature of the decor was a large picture of Sean Connery, James Bond, famous for his drink being shaken but not stirred.

Secrets Of Austrian Wine Revealed In Singapore

During Austrian wine week in Singapore I went to Leopold's wine bar in Tanjong Pagar to meet the visiting Austrian winemaker Johannes Gebeshuber and try his wines which are not just organic but biodynamic. 

Johannes told me that yesterday's (Monday's) opening night wine tasting dinner attracted lots of Austrians who live in and/or work in Singapore. I tried three white wines and two reds and recalled some of my visits to Austria..

I nostalgically recalled how we bought the popular etched, squat bubble-bowl wine glasses with the short green stem, with an ironwork table stand. We bought our first set in Vienna's wine region, Grinzing. Called Romer, these glasses were popular from the 1900s to the 1980s says Johannes Gebeshuber. (Pronounced not shuber but gebes-huber)


Riedel
Nowadays you are served wine in the expensive, upmarket Riedel glasses which come from the Tyrol region of Austria. (Riedel pronounced like reed, but the spelling is i before e. In German you pronounce the second vowel). Riedel glasses are thin with fine rims and the glasses are shaped to maximize the aroma or flavour of each type of wine or spirit.

If you want to taste wine in Austria, you can go to a suburb of Vienna to Grinzing for winebars or outside Vienna to a vineyard where you can taste their wines:

Hygiene in hotel rooms - warning

I always wash a glass before using it, even at home. Insects come out at night, flies, dust settles. But bathroom tap water is not drinking water. I bring bottled kitchen water from home, also for washing our hands in motorway petrol station toilets.
