In a car you can play i-spy. I-Spy which is a series of booklets you can buy on all sorts of subjects, some of these books I had as a child.
Nowadays, you can make a mental or physical list of objects to spot on a journey. I think the easiest way to rmember them is alphabetically. For example,
apple - a grocery story, computer or phone shop, orchard. Airport. Aeroplane.
b - bar, bbq, bird. bicycle, bridge, back yard (USA, meaning as) back garden (in the UK), beach, bay, bilingual sign. Breakfast. Bus. Blue sea or sky.
c car. cafe, castle, cat. chair, children's playground, children's shop. Chinese restaurant, church, cloud, cinema, coffee, coffee shop, cow
If you can't see them all, arrange a timed contest of passengers, or journeys. For example, who can spot the most of one item, eg bridges, or do a survey, which journey has the most restaurants, garaages (USA petrol or gas stations) traffic lights. Or let the passengers pick their own objects by shouting out, I see a tree, t for tree. I see a bicycyle, b for bicycle. To make it easier, include colours.

garage, German word or shop or place name, grocery store, greengrocer's
hat, hedgehog, hill (or sign to a hill, or road with the name hill, or signpost with a placename containing hill, horse, hospital, hotel, house

kiosk, king (eg street name, pub sign). KFC.
lamp post, lorry lunch
m Maori sign, McDonalds, motorbike
no sign (eg no entry, no parking, no smoking)
ocean
Parking. Phone, Polish shop
queen (eg street name, pub sign), queue
restaurant, restroom, Roman word (chester)
sea, sheep, ship, shop, skip, signpost, slow sign, speed camera. supermarket. Starbucks.
table, theatre, toilet, traffic light, train, truck
underpass, unerground station, umbrella
vine, vineyard
waste bin, wheelie bin. White background to sign. Wine bottle. White clouds.
x-ray department
yellow.
z zebra crossing, zoo
