In London at the BBC Good Food fair in London, I went to a cookery class where we learned how to make macaroons. If I remember rightly, they suggested every variety you might fancy, from coconut to blueberry to fresh fruit such as raspberries to tinned fruit such as plums or prunes to chocolate.
